Warm Apple Pie


The trick to any pie is always in the crust.  I love a whole wheat pie crust.
Here's what I do...


whole wheat or multigrain flour                 5 cups (may have to add more)
lard                                                               1 lb
salt                                                                2 tsp
egg                                                                1
vinegar                                                         1 tbs
sugar                                                            1 tblsp
Beat egg, add lard,vinegar and 1 cup of water.  Beat.  Add salt sugar and slowly add flour. Form 2 balls and press into pie plate.

Apple filling: for 2 pies
apples                          12
flour                             4 tblsp
sugar                            1 cup sugar
salt                               pinch
cinnamon                      lots
nutmeg                         1/2 tsp
lemon juice                   squeeze or 2tblsp
vanilla                           1 -2tblsp
butter                           4 tblsp


Core the apples, I don't peel them.  Put them in food processor and pulse mix until they are chopped.  Add the rest of the ingredients and mix.  Put into 2 pie shells and bake...see below.


Peach filling: for 1 pie
sugar                             3/4 cup
flour                              3 tbsp
nutmeg                          1/4 tsp
ginger                           1/4 tsp
cinnamon                       1 tsp
salt                                pinch
fresh peaches                 5 cups
butter                            2 tblsp

* don't be afraid to add a different fruit like strawberries to either recipe to have some variety.

Topping for pies:
either use 2cups of granola cereal with 2 tbsps flour and 1/4 cup butter
or 12cup rolled oats, 1/42cup almonds, 1/4 cup brown sugar, 1/4 cup flour and 1/4 cup melted butter...mix together and spread on top of pie.  This pie is really quite nutritious. You can always add more butter and sugar to make it tastier, but made like this, I will actually let my kids eat this with ice cream for breakfast!

Bake at 400F for 40 min's. Don't forget the vanilla ice cream!




Soft Banana Muffins

flour                               2 cups
rolled oats                     2 cups
flax seed                      1/4 cup
hemp seed                  1/2 cup
baking powder             4 tsp
baking soda                 2 tsp
salt                                1 tsp

Using whole grain or multigrain flour mix all dry ingredients.

In a separate bowl mix:
beaten eggs                  4
jars of baby fruit             4 (or applesauce)
honey                           1/4 cup
bananas                      6 soft and ripe
milk                              1/4 cup

Add two bowls together.  Mix.  Add chocolate kisses, walnuts and raisins.  About 1 cup each.
Put into muffin wells (with papers) and bake at 400F for 20 min's.


Summer Salsa

tomatoes              4 large
white onion           1
fresh cilantro        1/4 cup
jalapeno pepper    1/4 of one
lime                       squeeze
salt                        sprinkle

Chunky chop each of the above and put into food processor.  Mix using pulse until small and blended.

Simple, different and delicious!
Warm a round of brie with brown sugar sprinkled on top in the oven for 5-10 mins.  Add slices of tomato, pecans and more brown sugar.  Bake for another 10 min's.  Serve with toasted crackers.
Chocolate Chip Cookies

butter                         1 cup
packed brown sugar    1/2 cup
vanilla                         1 tsp
flour                            2 cups
kisses for cookies        1 cup

mix all ingredients roll into cookies pat a bit and bake 325F for 10 min's.





         
        Just a Nibble

On a plate, I like a solid color like white,
place different pieces of chocolate.
Mix it up with shapes, sizes,
flavors and color.  Put together two
or three of each one,and then add
some fresh mint or rosemary here and there
for color.

An extra special touch would be to add some wine and do a little wine pairing with each chocolate.  The thing to remember is to try and match boldness of flavor.  Therefore, the stronger tasting wine would go with the more intense chocolate.

Some ideas:

A sparkling wine like Braida Brachetto d"Acqui, goes well with milk chocolate.  Perfect for an afternoon delight.

Kelly's Promise, sparkling shiraz, with a spicy chocolate or chocolate pudding.

Bonny Doon Framboise with a cherry centered chocolate.

Port is great with dark chocolate and definitely my favorite.

       Grandma's  Buns

Soak 1tbsp yeast in 1/2 cup warm water with
2tsp sugar.  In a basin mix:
4 cups water
1/4 cup sugar
1/4 cup oil
2tbsp vinegar
21/2tsp salt

add yeast mix, slowly add 6 cups flour, stir with hand beater.  Keep adding flour so not too sticky. Knead dough so not lumpy.  Put basin in a lukewarm oven (warmed and shut off).  Wait until it doubles in bulk.  Knead and raise again.  make into round buns on a tray and let raise one more time.  Bake 400F 25-30 min's.

  Lip Licking Lasagne


Meat Sauce
1 lb beef
1 cup rolled oats
1 cup water
spices and fresh garlic
salt and pepper
1 700-750 ml jar of pasta sauce
1 can bean with molasses

Fry beef, add rolled oats and water, spices, garlic salt and pepper.  Add sauce and beans let simmer.

Cook 12 whole wheat lasagne noodles in a pot of boiling water

Cheese Mix
2 cups cottage cheese or ricotta cheese or mix
1 cup fresh grated Parmesan cheese or 1/2 cup grated Kraft parm
2 eggs
dried basil, parsley, garlic powder salt and pepper
If you want a whole meal you can put fresh spinach in food processor and blend or 1 small bag of frozen spinach

Add all ingredients and mix with fork.

Oil bottom of lasagne pan 9x13 inch.   Layer of 4 noodles.   1/2 of meatsauce.  Layer of noodles.  All of the cheese mix. Layer of noodles.  Remaining meat sauce.  Enough grated mozzarella cheese to cover.

Cover with foil and bake in 350F for 1 hour.   Uncover and broil on low for 5-10 min's just to brown cheese.
Creamy Artichoke Noodles

Sooo simple yet sooo mmmmm

In food processor add 1 380ml can drained artichoke hearts.  2 cloves of garlic, and salt and pepper to taste.  Mix on pulse until pieces are smaller.  Add to the food processor 1/2 cup Parmesan cheese, 1 cup cream and 2 tbsp butter.  Mix again.

Pour into pot, heat on stove until boils.  Stir occasionally.  Don't over cook it because the artichokes will lose their flavor.

Pour over top of cooked rice noodles (I like the white spaghetti type for this recipe).  Mix and serve. 

You can also add shrimp or chicken.

Darren's Deep Dish

Baked biscuits
1 lb cooked ground beef with spices and fresh garlic
2 cans mushroom soup
1/2 cup milk or cream
1 can green beans or fresh green beans
dried onions
whipped potatoes (cooked and whipped with butter, salt and pepper and a pinch of garlic powder
cheddar cheese, grated


Take a 9x13 baking dish.  Layer the bottom with baked biscuits.  Mix cooked ground beef with mushroom soup and 1 can of green beans. Layer over biscuits.  If you are using frssh beans, layer them on top of the ground beef and soup sayer. Sprinkle some dried onions on top.  Add layer of whipped mashed potatoes and a layer of grated cheddar cheese.  Bake at 350F until cheese has melted. This recipe has it all....just like the person who gave it to me!
